No-Bake Dark Chocolate & Almond Butter Cups

One of the most common things I hear from parents is: "My child won't eat healthy food because they just want sweets." My answer is always the same β€” let's make the sweets work for them. These dark chocolate almond butter cups are the treat I recommend to every family I work with. Dark chocolate (70% cacao or higher) is genuinely one of the best magnesium-rich foods available, and magnesium is one of the nutrients most consistently deficient in children with ADHD. Pair that with almond butter's healthy fats and vitamin E, and you have a treat that tastes indulgent but actively nourishes your child's brain.

  1. Line a standard 12-cup muffin tin with paper liners. Set aside.
  2. Melt the dark chocolate and coconut oil together. You can do this in a double boiler over simmering water, stirring constantly, or in the microwave in 30-second bursts, stirring between each. Do not overheat β€” stop when just smooth and glossy.
  3. Spoon about 1 tablespoon of melted chocolate into the bottom of each muffin liner. Use the back of a spoon to spread it up the sides slightly to create a little cup shape. Place in the freezer for 10 minutes to set.
  4. While the chocolate base sets, stir together the almond butter, honey, vanilla extract, salt, and hemp seeds (if using) until smooth and well combined.
  5. Remove the tin from the freezer. Scoop about 1 heaped teaspoon of the almond butter mixture into the center of each chocolate cup, pressing down gently to flatten slightly.
  6. Spoon the remaining melted chocolate over the top of each cup, covering the almond butter completely. Tap the tin gently on the counter to settle and smooth the chocolate.
  7. Sprinkle each cup with a tiny pinch of flaky sea salt β€” this elevates the flavor dramatically.
  8. Return to the freezer for at least 20 minutes until fully set. Store in an airtight container in the fridge for up to 2 weeks, or the freezer for up to 3 months.
🍯 Nutritionist's Tip

The cacao percentage matters here β€” don't go below 70%. The higher the cacao, the more magnesium and antioxidants, and the less sugar. If your child finds 70% too bitter at first, start with 70% and mix in a small amount of honey into the chocolate layer. Over a few weeks, their palate will adjust and they'll love it as-is. I've never had a child turn these down. You can also use sunflower seed butter instead of almond butter for a nut-free school-safe version.
